[News] Umberto Bombana of 8½ Otto e Mezzo (HK) cooking collaborationwith Kirk Westaway at Jaan (Singapore)

 

While chef pop-ups are a dime and a dozen, it’s not often you hear about chef collaboration involving one as legendary as Umberto Bombana of 8½ Otto e Mezzo (HK), the only Italian restaurant outside Italy with 3 Michelin stars. Recently awarded the Lifetime Achievement Award at this year’s Asia’s 50 Best awards, Bombana will be cooking with Kirk Westaway, chef de cuisine of Jaan (Singapore), for both lunch and dinner at the one Michelin-starred Jaan on 10 and 11 July 2017. Priced at S$188++ for six courses at lunch and S$298++ for eight courses at dinner, the dining event brought to us by Fine Dining Lovers and Miele will feature dishes by both chefs. For dinner only, Bombana will serve his signature homemade pappardelle lamb ragout with Kubota eggplant and mint and this will be followed by dishes like confit of abalone carpaccio with Oscietra caviar, sweet pepper and semi-dried tomato (available at both lunch and dinner). Westaway, on the other hand, will field his signature dish of heirloom tomato with basil and burrata for both lunch and dinner and for dinner only, diners will get to savour his dish of Arctic char with seaweed hollandaise. Fans of 8½ Otto e Mezzo will also be pleased to know that for both lunch and dinner, Marino Braccu, General Manager of 8½ Otto e Mezzo, will be on hand to prepare the restaurant’s signature style sgroppino (a lemon sorbet cocktail), served in style by your table-side. Book early as reservations are expected to sell like hot cakes.
