Most ethnic Chinese in Southeast Asian countries trace their ancestry to Fujian. In Singapore, Hokkien is the largest Chinese dialect group, accounting for more than 40% of the Chinese population. Up until now, however, not much is understood about Fujian cuisine in this part of the world.

Do you, for instance, know that Buddha Jump Over the Wall 佛跳墙 has its origin in the Fujian Province during the Qing Dynasty? Have you tasted an authentic version made using traditional techniques ? The process begins with the rehydration of dried Chinese delicacies like fish maw and abalone, and culminates in a 10-hour brewing process in a sealed pot with precise flame control. An authentic bowl of Buddha Jump Over the Wall 佛跳墙 is rich with delicate umami, complex in flavour yet texturally light, if mildly viscous with collagen, and filled with edible sea treasures.

For 2 days only on 25 and 26 July 2024, Malaysia-born and Singapore-trained Executive Chinese Chef Edward Chong @edwardchongkf of Peach Blossoms @peachblossomssg (#74, Asia’s 50 Best Restaurants 2024) will welcome Chef Chen Zhiping, recipient of Michelin Shanghai’s 2021 Young Chef Award and Executive Chef of the one Michelin-starred 遇外滩Meet the Bund (#50, Asia’s 50 Best Restaurants 2024, two diamonds on Black Pearl Guide 2024), Shanghai, to the Lion City, where they will jointly present The Fujian Diaspora dinners.
