Prin Polsuk, Chef-Owner of Samrub Samrub Thai, sweeps into Singapore on 26 and 27 February to takeover Indocafé for 2 nights only.
Instead of rehashing the dishes served at the seven-year-old Bangkok restaurant that he co-owns with his wife and business partner, Mint Jarukittikun, the power duo will be giving us a glimpse of their soon-to-open restaurant MAE OUI AMA – A Tribal Community Market, a concept that melds the Northern Thai fare and the Laos-Chinese-Myanmar influenced hill tribe mountain cuisine from Chef Prin’s ancestral home, with his Bangkok-born wife’s Thai-Teochew heritage.
About Chef Prin Polsuk
Chef Prin Polsuk is one of Thailand’s most revered chefs. Born and raised in a farming family in Lampang, northern Thailand, and raised in Chiang Mai, where his family also ran a local bakery, Chef Prin originally aspired to be an artist. At the age of 31, he shifted his focus to the culinary arts. His journey began at Sala Rim Naam in the Mandarin Oriental Bangkok, where he honed his skills for four years. This was followed by a pivotal period from 2008, when he worked with the renowned chef David Thompson at Nahm London. In 2013, Chef Prin returned to Thailand to lead the kitchen at Nahm Bangkok as Head Chef, a role he held for 5 years. He later founded Samrub Samrub Thai in 2017 with his wife and business partner, Mint. What started as an adhoc pop-up project eventually evolved into a full-fledged restaurant that aimed to provide a platform that advocates for Thai regional cuisine and its native ingredients. The couple has travelled extensively in and around Thailand to research and understand sub-local regional Thai culture, seeking forgotten recipes and reinterpreting them respectfully for the 21st century.
Samrub Samrub Thai has one Michelin star and is currently ranked #29 on 2024 Asia’s 50 Best Restaurants, and #75 on 2024 The World’s 50 Best Restaurants list.
