3 years after planting Cugini Trattoria Pizzeria at 87 Club Street, Mauro Muroni and Gerri Sottile, both co-owners of Mangiattutto Group of restaurants that include Sole Pomodoro and Cuigini, are setting their sights on Spanish tapas, inspired by their 4 years spent in Valencia. When a space along the gently winding slopes of buzzy Club Street became available, the Italian duo seized the opportunity to create an all wood-and-tile taberna with whitewashed window and door frames that open out into an outdoor terrace sheltered by an awning in lipstick-red, proudly bearing the eatery’s name in bold. Los Primos Taberna Y Tapas Bar (“Los Primos”) opened in August 2012 with 2 Spanish chefs – the 3rd is on his way to Singapore as we speak.
What to expect?

Unperturbed by Spanish eatery, La Cicala, that operates in the same neighbourhood, Los Primos serves up formulaic hot and cold Spanish tapas fare that, on paper, will not raise eyebrows. But if the light and savoury deep fried croquettes with iberico ham is an accurate barometer for quality, Los Primos passes with flying colours; and so too with the tortilla de patatas (omelette with potatoes and onions).
Los Primos is not a one trick pony; it also had us rapt with its solid menu of parilla-grilled seafood and meats like the iberico secreto (secret cut from acorn-fed Iberian black pigs) and the de rigueur 30-hour slow-roasted suckling pig that boasts a skin so crisp that it triumphs the last great one we’ve had.
Though the concluding dessert of homemade gelato (we love the pistachio and milk-flavoured gelato) lean towards Mauro and Sottile’s Italian lineage, they’re no less toothsome. But for a classically Spanish sweet, you can’t go wrong with crema Catalana (the Spanish take on crème brulee) and the moist and no-too-rich flourless almond cake named Santiago.
