For one night only on 9 June 2017, Denis Lucchi, Resident Chef of Italian restaurant Buona Terra, Singapore, will host Eelke Plasmeijer, Chef-Owner of Locavore, Bali (No. 22 on Asia’s 50 Best 2017 and recipient of the Highest Climber Award), to a four-hands dinner at Buona Terra. For this one-off dinner event, both chefs will collaborate on an umami-themed seven-course dinner aimed at highlighting the “savouriness” of the ingredients that each will bring to the table. Priced at S$248++ per head (with additional S$108++ per head for wine pairing by Buona Terra’s excellent sommelier, Gabriele Rizzardi), the dinner will showcase Plasmeijer’s umami approach via courses like “tomato” (tomato, Bloody Mary sorbet, tomato consommé) and “umami” (organic brown rice with mushroom stock, champignon and homemade “MSG”). Lucchi, on the other hand, will be leveraging on umami ingredients from his Italian larder, fielding a dish of crispy skin tilefish with mullet bottarga in acqua pazza as well as a fusilli pasta with cinta senese ham stock, Parmesan, Pecorino and guanciale. Apart from the seven courses, the chefs will also be serving a parade of snacks prior to the commencement of the meal, think rigatoni cracker with lardo and sea urchin as well as black rice blini, smoked egg and purslane.
