Lewellyn’s Fried Chicken

By now, fried chicken lovers would have gotten wind of the opening of The Bird Southern Table & Bar (“The Bird”) at Marina Bay Sands. The only Asian offshoot of the Miami-founded Yardbird Southern Table & Bar (not to be mistaken for Yardbird from Hong Kong), The Bird serves Southern cuisine headlined by Lewellyn’s Fine Fried Chicken (S$35 for half a chicken) that pays tribute to the grandmother of founder, John Kunkel. No doubt a comparison with Kentucky Fried Chicken will spring to mind but make no mistake, The Bird uses only hormone-free and steroid-free French poulet that’s been brined for 27 hours, then dredged in flour and spices before being fried. Order the lunch set special (S$18) and you’ll get two pieces of the fried chicken alongside a stack of chilled spiced watermelon and a piece of house-made buttermilk biscuit.

Macaroni & Cheese

The Bird may be all about the bird but it’s really not just about the bird. There are two other items that you should not miss: Shrimp ‘N’ Grits (S$39), a quartet of sautéed shrimps served on a snow-white blanket of stone-ground polenta enriched with cream cheese and butter; and Macaroni & Cheese (S$14), prepped with not macaroni but torchio pasta, which apparently cups the cheese and sauce better than macaroni, enveloped in five types of melted cheese (Parmesan, cream cheese and 3 types of cheddar) and finished with a dusting of herbs.

The Bird has a bigger drinks list spanning three pages compared to its single paged food menu so don’t leave without a sip of its signature punch: Blackberry Bourbon Lemonade (S$27) – Wild Turkey Bourbon, blackberry puree, fresh lemon, cardamon and Angostura Bitters.
