Setting
Facade of No Menu @ Boon Tat Street

One of No Menu’s 2 eateries at Boon Tat Street
Owned and operated by Osvaldo Forlino and the Forlino clan  – including his wife, sister, 2 daughters and niece – who hail from the Piedmont region, No Menu occupies 2 units of shop house space at Boon Tat Street and it’s the Forlino family’s flagship outlet in Singapore; they also own Amarone at Capital Tower and Ola Cocina Del Mar at Marina Bay Financial Centre.
Osvaldo Forlino and his wife, Patricia Forlino
Forlino found fame (and fortune later) in Singapore when he lent his family name to Beppe de Vito’s then One Fullerton-based Italian restaurant (till today, the restaurant is still named “Forlino” but ownership has since changed hands). When he jumped ship and started a new Italian restaurant with a business partner at Maxwell Chambers, he named the restaurant “Osvaldo Ristorante”, after his first name; this has since closed when Forlino opened No Menu at Boon Tat Street.
You won’t miss Forlino’s pair of glass-fronted eateries along the Boon Tat stretch – both sport a homey and rustic feel with lots of wood and rugs framed by walls adorned with copper pans and family heirloom artefacts, much like an Italian home.
What to expect?
Whilst No Menu boasts an a la carte menu of generously portioned Italian classics augmented by daily specials – including the poached egg crowned with seasonal white truffles that perfumed the next table’s dinner – No Menu, as its name implies, is all about the home style menu-less ensemble of dishes that are meant to surprise (S$98++).
Antipasto of burrata with a trip of hams
Snapper fish with caponata
Green apple cake with tiramisu
During our visit, the surprise dinner included an antipasto of luscious burrata cheese flanked by a trio of hams (Serano ham with pear, Coppa ham on Russian salad and veal loin basking in home-made tuna sauce). There was also a hot antipasto of sautéed prawn on a bed of mashed potatoes doused in portofino sauce. The highlight of the meal was the ensuing tasting of homemade pastas that, during our visit, included a mound of asparagus-flecked risotto, a generous pocket of burrata-stuffed ravioli in Sicilian tomato sauce and petite pillows of veal and Parmesan-stuffed ravioli. For mains, pick from seafood (snapper in caponata sauce) or meat (beef cheek on a bed of mashed potatoes) – whilst these options do not raise eyebrows, they were faultlessly executed. To end, Patricia Forlino (Osvaldo’s wife) presented a slice of heavenly green apple cake flanked by a mound of equally enticing tiramisu.
This surprise menu works well for diners who are new to the world of No Menu but for returning regulars, Forlino has tricks up his sleeves in the market specials that features seasonal delicacies like white truffles and white asparagus. Perhaps that explains why No Menu was almost full during our visit during the white truffle season, when Boon Tat Street was starkly quiet.
